Being a Singaporean Chinese, I grew ...I love offal! Being a Singaporean Chinese, I grew up eating lots of it in hawker dishes like kway chup and pig intestine soup and I miss such dishes a lot! I am really keen to try their offal tapas now. Have you tried andouillette? (sausage made with pig's tripe), I read about in Ann Mah's book 'Mastering the art of French Eating' and was very intrigued by it after haha.
